Lazy Snow Day

The east coast got pounded with a snow storm and since my husband has to go to work no matter what and we don't have anyone nice enough in our neighborhood, Duncan and I are snowed in!

What else is there to do?

Cook and Bake and Play with my little man.

Thankfully, my son is almost over his horrific cold and almost back to his normal, cheery self. Hubby is sick though and I'm just praying it doesn't come around to me too.

Breakfast: Whole Wheat Banana Pancakes
(Whole Wheat Flour, Kosher Salt, Baking Powder, Baking Soda, Organic Eggs, Organic Whole Milk, Organic Butter, Organic Bananas, Organic Raw Honey, Organic Maple Syrup)

 In a large bowl, whisk together 2 cups flour, 2 tsp baking powder, 1 1/2 tsp baking soda, 1/2 tsp salt.

Mix together 1 Tbs honey, 2 eggs lightly beaten, 1 3/4 cup milk, and 2 Tbs of melted butter.

 Make a hole in the center of the flour mixture and pour in egg mixture.


Whisk together, but do not overmix.

Mash bananas and add to batter mixture.

Heat griddle or a large saute pan to medium-high head and melt enough better to coat the plan.
Drop about 1/4 cup of batter into the pan at a time and cook until done.

I served my pancakes with organic butter, organic maple syrup, and organic raspberries!
Duncan ate half my raspberries and in addition to his organic banana, an organic breakfast bar, he ate half of a pancake...I guess they were good and he was hungry!


Snack #1: Organic Strawberries and a Clementine


Lunch: Caprese Salad with Basil Pesto
(Organic Tomato, Basil, EVOO, Mozzarella, Kosher Salt, Pepper, Parmesan, Organic Garlic)

Combine about 1 cup to 1 1/2 cups of basil, 1 garlic clove, 1-2 Tbs olive oil, 1/4 cup Parmesan cheese in a food processor.

Pulse until well blended.

It doesn't look like much, but man was it filling! So colorful and so yummy!


Snack #2: More Organic Strawberries!!


Dinner: Organic Whole Wheat Spaghetti with Organic Chunky Marinara Sauce and Freshly Grated Parmesan
