This winter has been brutal here on the east coast.
We've had unseasonably warm weather in the beginning of the winter, negative degree days, tons of snow, ice, and freezing rain...is it spring yet?!
Today, I will be doing more baking and cooking. Everything from scratch from now on. It may take longer and be more work on my end, but at least I will know what I'm putting in my body and what I'm giving my family to eat.
On today's menu...

Breakfast:
Pecan Maple Cookies with an Organic Hard Boiled Egg, and an Organic Banana
(Whole Wheat Flour, Old-Fashioned Rolled Oats, Pure Vanilla Extract, Kosher Salt, Baking Soda, Organic Pecans, Organic Egg, All-Natural Applesauce, Organic Butter)
Mix together 3/4 cup Rolled Oats, 1 cup Whole Wheat Flour, 1/2 tsp baking soda, and 1/4 tsp salt.
In the electric mixer bowl, combine 1/4 cup Applesauce, 3 Tbs Maple Syrup, 2 Tbs softened butter, 1 egg, 1/2 tsp vanilla and beat until combined.
Add in the dry ingredients and keep mixing until well blended.
Chop pecans.
Fold in the nuts with a spatula.
Drop cookies onto a baking sheet and bake at 375 for 8-9 minutes or until they start to brown.

Snack: Clementine
Lunch: Whole Wheat Macaroni and Cheese with Peas & Fruit
(Organic Whole Wheat Pasta, Whole Wheat Flour, Kosher Salt, Pepper, Organic Milk, Parmesan Cheese, Organic Butter, Organic Mozzarella Cheese, and Whole Wheat Panko Crumbs
Cook pasta according to package instructions.
Melt 2 Tbs butter in a saute pan.
Add 2 Tbs flour and whisk until the roux starts to darken.
Turn the heat down to low and whisk in 1 cup milk. Turn the heat back to medium and keep whisking until the mixture starts to thicken and all lumps of flour are gone.
Stir in the cheese and once it melts, mix in the cooked noodles. Season with salt and pepper.
Sprinkle with whole wheat breadcrumbs and/or Parmesan, if desired.
A healthier version of Mac & Cheese, Organic Green Peas, and a Clementine.

Turkey Bacon, Organic Broccoli, and Cheddar Cheese Quiche with Whole Wheat Crust
The funniest part of today's meals is that the ones I enjoyed the most were the healthiest, the breakfast "cookie" and the fruit. I guess eating healthy grows on you!
